@drwho I have found that a proper roasting pan with a lid does wonders for speeding up the process. Cuts the time in half.

@drwho Well, I meant the roasting time. The brining, well, that mostly takes as long as it's gonna take. (Unless you want to do it under pressure, which seems like a Bad Idea to attempt at home)
