Mashed potato is the ultimate comfort food. Reminiscent of childhood — large plates of mashed potato, buttery and herby, steaming hot from the pan and piled with other vegetables — it takes me back to days of large gardens, lazy days, and few cares.

Oh, yeah! A childhood favorite was mashed potatoes with creamed spinach and fried eggs or fish sticks. The mash was best made from scratch. When my mom didn't have enough time, she'd use a mash mix from a package. Fond memories! 🥰
