I cooked some Indian black rice, called KARUPPU KAVUNI rice, and I have been a bit obsessed by it for a while. It is nutty, slightly sweet, and dark tasting. I love it.
I soaked it for 24'ish hours (longer than necessary - I usually do overnight but can do as little as 90mins). It is really good cooked with enough water to leave it slightly wet - not soupy, just wet.
In the Instant Pot that is 1 cup rice that has been soaked, with 2.25 cups stock or water with stock cube. Cook HP 15mins with FNR. (For stove cooking, use 3 cups water to 1 cup rice, and watch the water levels.)
I hope you can find some of the rice - it is not available everywhere here.
No need to serve it with only Indian dishes. Tonight, because I ate big at the Indian lunch served when our meeting was finished, I wanted something very simple and no fuss to make. It was the rice, my delicious kimchi on top of the rice, avo on the side, and chilli crisp spooned over the rice and avo. It was Deeeelishous. (Secret hint 馃か - avocado with chilli crisp is always awesome!)
