Decided to be extra and blow torch my homemade fried rice for a bit of a taste of home.
Stoves outside SE & E Asia simply don’t get hot enough for me
When I want to be double extra
I separate egg whites from yolks
Soak best quality dried scallops from the Chinese dried herbs and dried seafood store
And do a fussy ‘黄金炒饭’ (golden fried rice, with wisps of egg whites). Fancy Cantonese places will do something like that and it’ll cost much more than a regular fried rice. It just feels like a touch of luxe to me and I enjoy it.
