There's a good general one at https://tubefree.org which already carries many long original interviews by the owners of the instance. I'm sure they'd be fine with others uploading interviews too.
Also if you are okay paying for hosting might be worth considering your own instance through something like @fedihost , it's a lot cheaper than people realise (https://fedihost.co/hosting/peertube).

@FediThing @fedihost thanks alot - yes TubeFree looks a great option for a video community - and @ozoned was v friendly. Scott Jensen and LABR are great names to see when I first visited, and BT Free in general sounds a top org.
But I'm being drawn back to hosting myself… when I last tried five years ago there was no off-the-shelf and it cost me a ton and lots of headache (someone uploaded a perfect HD copy of Dune before it was out in cinemas, which has been prisonable in the UK!). But €7-15 is really appealing and I know better than having open signup now!

Honestly MORE Peertube servers is only a good thing as far as I'm concerned.
And, yes, sadly, open signups are just trouble. Having even a few barriers to entry, while it does put off some, has helped me keep the server fairly easy to manage. Folks have to ask to get an account. Then I make them ask again for some storage. Then I monitor the videos they put up until I know we're all on equal footing and then let them upload whatever.
It's a lot of work, but there's only been 1 instance of someone attempting to post copyrighted content and I turned them away and they haven't come back.
I'm hoping to offer like 50GB free, and then $1/month or $5/month above that. That little bit of money, those hurdles, show that if someone wants to do that, they're wanting to be a member of a community and not just use us as a dumping ground for content.

This will be a one-user instance. I'll see how many resources it uses before changing that (five years ago I spent too much money on it but I was also doing it via YunoHost so was probably missing stuff).
I only got three submissions - one was a short film which I published, then there was a grainy copy of Maze Runner 3 then the HD Dune which forced me to shut signups. Human vetting sounds like the answer.
Sidenote: those sound good prices. I've been on social.coop since 2017 as it was the only instance back then that unashamedly asked for money to pay for bills and towards time…
One Q "if you want to federate with me" - does that mean peering videos / WebRTC? Or more like following to establish more legitimacy across the fediverse.
