A1. Catching up late on Saturday evening from home in Northumberland, UK.

Due to some nasty lurgy that made its presence very noticeable on New Year's Night, my tastebuds haven't been themselves for over a week, but I can remember that the porchetta that we made for Christmas Day was *very* tasty. Might try that again.

After few days skiing I am back home.

I got carried a bit by answering other questions and forgot about the first one (and trying to suggest some solution for your bombs).

In the mountain village where we are staying each year on our skiing trip we try the local beer every time. It is usually quite horrible, sometimes we don't even finish it. But this year it was really good, we were pleasantly surprised that they managed to brew something good after so many years we were going there for only one beer.

@ascentale @bikenite A1. I’m more delighted than usual to report that I’m in Waterloo, Ontario, Canada. That’s 90km west of Toronto, Canada’s largest city.

I made a batch of minestrone soup last weekend, and it was delicious!

@ascentale @bikenite #BikeNite A1. Late as usual, I am still in Hamburg, buried under snow at the moment!

I recently had some candied orange slices that were magnificent. If I were answering this later today I'd almost certainly tell you instead about the Finnish salmon soup I'm making (https://lacuisinedegeraldine.fr/en/finnish-salmon-soup-lohikeitto#recipe). It's REALLY good.

@ascentale @bikenite A1 posting from Broken Hill a pleasant 28⁰C which is a nice change after the searing temperatures we've had all week. It peaked at 52⁰C (125⁰F) on Thursday! I just had a punnet of lovely raspberries from Coles (they'd never grow here in the desert). One of my favourites.

@bikenite A1. Hello, I am back in Oakland, CA! Something tasty I had is a homemade cider. We visited a friend's place months ago, and had too much apple cider to drink. When it started fermenting natrually, I picked up a packet of cider yeast and tried making real hard cider.

I haven't done this before, and it didn't taste that great. I read about bottle conditioning and bottled, then added some sugar to carbonate.

Last night I finally tried some (and lost half of the cider when all the CO2 was released 😢 ) but it tasted really good!

If you used flip-top bottles, let it sit for one year and they will leak some pressure!

I had the same issue with my first cider and it was perfect after ~15 months in flip tops.

Because I was working in brewery I got to bottle mine under CO2 so it completely eliminated this issue, but for the bottle carbonation you need small amount of sugar to not get bombs. You need to hit ~3-4°Bx so 3,5g per 1l, if you just add tee spoon of sugar it is usually too much.

Also for the taste it is best to use multiple kinds of apples, the sour ones are better but need more time to age.

@plactagonic @bikenite It's really interesting to experience how the flavors change over time, because I had used 2 sets of apples. The more sour variety tasted better at first, but not as nice as the sweeter apples after bottle carbonation. It's been about 2 months in the bottle.

I just used repurposed plastic sparkling water bottles. I expected a bunch of CO2 to be released when I first opened the bottle, but didn't realize that all of the sediment on the bottom created a bunch of surface area for an explosion! I now know to wait longer before unscrewing the cap all of the way.

@ascentale yeah the taste is 50/50 dependent on variety of apples and yeasts used. I have "the garden mix" - what I can get my hands on all juiced together. It gets quite interesting sometimes, but the sour to sweet apple ratio is something I always try to balance somehow, yeast can be managed easily.

PET bottles hold a lot of pressure before they explode (yes they don't leak that much) - if I remember correctly it is something like 6bar. And they aren't the best choice for aging, if I put something in them it is usually gone in 2 months after it is good for drinking.

Only thing that you can do to manage the carbonation at this point is temperature - cool it down so it holds more CO2 in the liquid form.

I try to plan bit more in advance and still end up short on glass bottles so I don't judge the usage of the PET ones. Also I use it all the time for beer that I know I will drink in a short time, you just have to know the limitations of them and plan accordingly.

@ascentale @bikenite A1. In a city near Frankfurt, Germany, as usual. This area is very famous for what we call "Äpfelwein". Some kind of cider. If you are ever coming to Frankfurt area you must taste it - with or without CO2! It's being sold everywhere.

@ascentale @bikenite A1. Santa Clara, CA. Today I liberated the right side mirror from a BMW with my shoulder (it overtook me, and turned into me to get into a parking lot. Fortunately it stopped or I would have plowed right into its door). I’m ok, but I have to look over the bike tomorrow. (And the groceries in my backpack were ok).

For Christmas I baked vegetarian Haggis Wellington. I first baked it on a whim maybe six years ago and it is now a Christmas tradition. Sooooo good!

#BikeNite A1: Posting from #WaterlooRegion, and likely will be doing so in these snowbound times.

We imposed ourselves at my sister's house this past week, and picked up food from a Chinese take-out place to be less of an imposition. It's really close to her house, has probably been there for decades, but I haven't lived there in decades, so it was new to me.

Surprisingly good food from a tiny little shop that's not very visible from the main street. Will take out again.

Posting from Arden, Ontario, a teensy village right on the Trans-Canada Trail. It's winter here so the trail js the domain of the snowmobiles right now, but I'm looking forward to spring and cycling season.

My wife recently made a ginormous blueberry cheesecake, so I've been monching on that all week. Still tuning the crust, but the cheesecake part is spot-on, and the recipe is for a very big cheesecake.

@moz @lopta @ascentale @bikenite yeah, I can ride in snow no problem and walk around in just a jacket at not very much above freezing, but 20ºC feels hot to me. Your comments about "only" 35ºC would need to be adjusted for the likes of me.

NW suburbs of Minneapolis. I routinely visit South Minneapolis; have friends and family there and enjoy the cultural amenities. Food, art museums, etc. Appreciate the cycling infrastructure, though it’s not super-well maintained during winter. There’s way too much ICE on the streets.

@ascentale @bikenite #BikeNite A1. Home in rainy Northern New England, today. Somethings tasty I ate recently were my first attempt at making お好み焼き okonomiyaki at home, and also some 竜田揚げ tastuta-age (Japanese style fried chicken) with pickled Jalapeño chiles and rice with のり佃煮 nori tsukudani.

@iris @ascentale @bikenite The short answer is that kara-age can very in its seasonings and coatings, but tatsuta-age is specifically seasoned with shōyu and mirin, and coated with katakuriko (potato starch)

I'm posting from Red's Savoy Pizza here in Rochester Minnesota. I'm waiting for the take out order to be ready.

I'm hoping the 'Sota style Hawaiian Pizza is tasty.

But I was in Chicago recently and they have gormet pancake restaurants we don't have here, and those breakfasts are especially tasty.

@ascentale @bikenite A1: Just got back home in Northshore, King County, near Seattle, Cascadia. Um.... housemate brought these chocolate-peanutbutter-peanuts back Williamsberg, Virginia when he was visiting his parents, and I just grabbed a few of those. They're pretty delicious.

I had a fresh baked sugar cookie earlier this afternoon. It were tasty, even if it failed to hold the shape of the cookie cutter because someone (me) forgot to re-chill the dough before baking.
