On Saturday, which was always gardening day, we had a big garden, big enough to feed four adults and two minors over the year, we had a 'short dish' for dinner. And 'Armer Ritter', 'Poor Knight', Frisian style was my favourite. Frisian style means spicy with fried bacon, fried onions, lots of parsley and a leaf of lettuce, sticked together with rémoulade.
Armer Ritter was a big slice of bread covered in pancake dough and fried till crispy!
Even today when I make this dish on Saturday I have the smell of garden soil in mind. And it tastes best after I had a good workout or at least a 5ml run.
BTW, I was 8 and it was 1970 …
Meanwhile I'm able to cock pancake style dishes around the world.
My favourite is Banh Xeo, with north sear shrimps, called 'Granat'. Fresh from the fishing boat in the harbour.
