Recipe: 'Quick and easy fish stew' 🐟🦐
Such a great simple healthy recipe. Here in Ireland the fresh leeks are amazing, and the smell of them (chopped raw) filled the house last time. Highly recommended -
Ingredients, Serves 2
1 tbsp olive oil
1 tsp fennel seeds
2 carrots, diced
2 celery sticks, diced (I prefer a sweet red pepper)
2 garlic cloves, finely chopped (or more 😋)
2 leeks, thinly sliced
400g can chopped tomatoes (the best you can afford eg. think Mutti, Cirillo)
500ml hot fish stock heated to a simmer
2 skinless pollock / white fish fillets (about 200g), thawed if frozen, and cut into chunks. Cod, hake, sea bass etc
100-200g raw king prawns
My "must-have" additions -
1 tbsp sweet paprika
1 tbsp smoked paprika
Chili flakes, to taste
(Optional: Some cooked mussels, if you want)

For anyone that might be interested: I just found a 1969 Black soul food recipe book in the Seattle digital archive collection. The whole thing is there: 50 recipes, all submitted by Black Seattleites, and compiled/published by the (sadly defunct) Central District radio station KYAC:
